Roll out your pie crusts on a lightly floured work surface. Roll out one crust to be slightly bigger than the other, so that you will easily be able to crimp the ends and close the pie when it’s time.
Put about a tablespoon of your filling into the dough. Then, using a round cookie cutter, cut circles out of the other pie dough. This will be the top of the “pie.” Take the tops and place them on top of dollops of apple filling, crimping the edges to keep them closed tightly.
